ymmmmmmmmmmmmmm............. casseroles... love 'em. I'll check it out...
favorite casseroles anyone?
I love the hot chicken salad casserole (topped with crushed potato chips).
broccoli and rice with musrooms, cream of mushroom, water chestnuts and topped with butter and cheeze whiz (the only thing I have ever used cheese whiz for).

I wonder if they have a recipe for the tuna casserole with potato chips on top? Or the casserole with creamed chipped beef with egg noodles?
My Mom used those recipes into the 60s.

I'll have to try the corn pudding from the Jiffy box. Can you believe, I have never made corn pudding before but love to eat it.
I remember having the tuna w/ potato chip casserole, but not growing up. I don't remember my mom buying potato chips. She would have substituted soda crackers because they were cheap. Ha!
Soda crackers were a filler in lots of stuff for us, from hamburger and meatloaf to salmon patties.

My Deda (grandmother) called those Salmon croquettes-they stunk the house up terribly but they sure were tasty with lots of ketchup for dipping!
There's a caterer in my hometown that started selling prepared casseroles to go about 10 years ago-loved by working moms and folks needing a pot luck contribution all over town!! She offered desserts, too-she did this almond joy pie that I always loved!! She also did a killer poppyseed chicken that was so creamy, buttery, and delicious!

That's what my Mom called them too.
A friend of mine in Greenville, SC, and one of her friends started making casseroles for friends for various occasions, such as for taking to the beach so they didn't have to cook at the beach or go out with large family groups. They ended up having a small catering business. They didn't make a lot of money, but it was profitable and something they enjoyed doing while stuck at home with small children.
Poppyseed chicken is the most popular casserole where I live. I'm fond of the King Ranch chicken casserole.

Mexican chicken spaghetti is probably my #1 favorite casserole followed by my Cavatini then poppyseed chicken-all delicious! It's supposed to cool off here this week-getting to be casserole, chili and stew weather again!

Mexican lasagna is a great way to use up all those half-eaten bags of nachos in the house. Just layer salsa, nachos, canned beans, black beans, cheese. It's very tasty and a great way to clean the pantry/fridge.
I used to love shepard's pie growing up. hamburg on the bottom, then peas, then mashed potatos on top. Don't think I'd love it as much now, but I did growing up.

Oh, one more. Blintzes (sp?) layered in a sweet sour cream sauce and baked with some fruit. Great for guests for breakfast. I think the recipe is on the frozen blintz box.

I made a Chicken, broccoli, noodle casserole tonight. yum! ... an adaptation from an old Home Extension cookbook. Now those are the best cookbooks I've got. Do states/counties still have Home extension services?
