    Australian Greek Salad

    Description: Greek salads are on many menus in Australia. Haven't researched why. But is a healthier alternative the the fish and chips (which are French fries in the U.S.) that are on virtually every menu there unless you're at a restaurant in Chinatown in Sydney, etc.

    I have become addicted to this salad, especially when I miss Australia.
    Serving Size: 2
    Time: 10 minutes
    Difficulty: Easy

    Ingredients:
    1. 3/4 bag of Publix romaine (doesn't have the preservative-filled taste of Fresh Express)
    2. 1/2 large tomato, cut however you like it
    3. 1/2 medium capsicum as the Aussies call it (red bell pepper), cut however you like it
    4. 1/3 large cucumber, cut however you like it
    5. A few thin slices of red onion, hamburger sliced
    6. Pitted Kalamata olives, your choice of how many (hubby 0, me 8)
    7. Goat cheese (less salty and creamier than feta even though on the menus the Aussies call it feta)
    8. Your favorites vinaigrette (which is always in my fridge and ready to go)
    Preparation:
    Instructions:
    1. Put all ingredients except olives and cheese into a salad bowl. Toss with vinaigrette. Put the olives and goat cheese on the table to allow each person to choose the amount s/he wants.

    Sounds reaaly delicious. What is your favorite vinegarette that you find at the grocery?

    Thanks, BR. Can anyone else recommend a good grocery store brand that they have tried?

    If you don't want to go to any trouble, just mix up 1/4 cup of salad vinegar, 3/4 cup EVOO, and add black pepper and garlic salt at the table.

    I really don't want to go to any trouble (I'm just that kind of a cook)--think I will try the Naturally Fresh Lite Ranch dressing you recommended on the other thread. Thanks.

    Ranch won't work with a Greek salad. Just buy a vinaigrette at the store.
