Ingredients:
  1. 4 C Diced cooked ham
  2. 2 TBS veggie oil
  3. 3 TBS Flour
  4. 3 C Chicken broth
  5. 1(16oz) pkg frozen seasoning mix
  6. 1 (16oz) pkg frozen chopped collard greens
  7. 1 (16oz) can black eyed peas, rinsed & drained
  8. 1/2 tsp crushed red pepper
  9. 1/2 tsp garlic powder
  10. salt and pepper to taste

  11. Cornbread Batter
  12. 1 1/2 C White cornmeal mix
  13. 1/2 C Flour
  14. 2 Large Eggs
  15. 1 1/2 C Buttermilk

Instructions:
  1. Saute ham in hot oil in a Dutch oven over medium heat for 5 mins or until lightly browned. Add flour and cook, stirring constantly for 1 min. Gradually add chicken broth and cook, stirring constantly, for 3 mins or until broth begins to thicken. Bring mixture to a boil and add seasoning blend and collard greens. Return to a boil and cook, stirring often, for 15 mins. Stir in black-eyed peas, crushed red pepper, garlic powder and season with salt and pepper to taste. Spoon hot mixture into a lightly greased 13 x 9 inch baking dish. Prepare Cornbread Batter as follows:
  2. Combine first 3 ingredients, make a well in center of mixture. Add beaten eggs and buttermilk to cornmeal mixture. Stir just until moistened
  3. Pour cornbread crust batter evenly over hot filling mixture.
  4. Bake at 425 degrees for 20 to 25 mins or until cornbread is golden brown and set.
