Ham N Greens Pot Pie wCornbread Crust
Description: Great casserole for New Years DayServing Size: 8 to 10 servingsTime: 1 hr (includes bake time)Difficulty: Easy
Ingredients:- 4 C Diced cooked ham
- 2 TBS veggie oil
- 3 TBS Flour
- 3 C Chicken broth
- 1(16oz) pkg frozen seasoning mix
- 1 (16oz) pkg frozen chopped collard greens
- 1 (16oz) can black eyed peas, rinsed & drained
- 1/2 tsp crushed red pepper
- 1/2 tsp garlic powder
- salt and pepper to taste
- Cornbread Batter
- 1 1/2 C White cornmeal mix
- 1/2 C Flour
- 2 Large Eggs
- 1 1/2 C Buttermilk
Preparation:- .
Instructions:- Saute ham in hot oil in a Dutch oven over medium heat for 5 mins or until lightly browned. Add flour and cook, stirring constantly for 1 min. Gradually add chicken broth and cook, stirring constantly, for 3 mins or until broth begins to thicken. Bring mixture to a boil and add seasoning blend and collard greens. Return to a boil and cook, stirring often, for 15 mins. Stir in black-eyed peas, crushed red pepper, garlic powder and season with salt and pepper to taste. Spoon hot mixture into a lightly greased 13 x 9 inch baking dish. Prepare Cornbread Batter as follows:
- Combine first 3 ingredients, make a well in center of mixture. Add beaten eggs and buttermilk to cornmeal mixture. Stir just until moistened
- Pour cornbread crust batter evenly over hot filling mixture.
- Bake at 425 degrees for 20 to 25 mins or until cornbread is golden brown and set.
- 4 C Diced cooked ham
