Description: this is a church potluck favorite in East Texas
Difficulty: Easy

Ingredients:
  1. 2lbs frozen shredded or cubed hashbrowns
  2. 1 onion
  3. 10 oz cheddar
  4. 8 oz sour cream
  5. 2 cans cream of chicken soup
  6. (or 16 oz sour cream and 1 can cream of chicken soup)

  7. optional 2 cups cornflakes with 1/4 cup melted butter as a topping-I skip this but another friend tops hers with 2 cups crushed orginal lays potato chips
  8. 1/2 cup butter melted
Preparation:
  1. let the potatoes defrost

  2. dice onion then saute in 1/2 cup butter

  3. grate cheese
Instructions:
  1. mix potatoes, softened onion and butter, sour cream and cream of chicken soup

  2. Spoon into greased casserole dish and bake covered at 350 for 45 minutes, uncover and add topping if desired then bake another 10-15 minutes
