Fajita Chicken Salad

- Chicken
- Mayonnaise
- Celery
- Jalapeno
- Purple Onion
- McCormick Fajita Spice
- Cilantro
- Salt
- Pepper

| Preparation: |
- Marinate 8 chicken breasts with McCormick Fajita Spice for at least one hour prior to grilling.
- Mince in a food processor 2 stalks celery, 2 jalapeno's (no seeds unless you like spice), half a purple onion, and bunch cilantro.

| Instructions: |
- Cut the cooked and cooled chicken breasts into small cubes (about 1 inch) and use the processor to shred the chicken, about 8-10 pulses.
- Place chicken in large bowl and add 1 1/2 cups mayonnaise (Hellman's Olive Oil Mayonnaise works very well) add minced vegetables and mix. To add additional fajita flavoring add 1/2 tablespoon of the McCormick Fajita spice.
- Salt and Pepper to taste and refrigerate for 24 hours.

I think I just did, I found it in my fridge  and it was delish! Wonder how it got there?  Thanks to whoever made it, it really is wonderful!
