Flax Crackers

Description: This week's most successful experiments are with flax crackers (high in fiber, healthy omega-3 fats, etc.) and they are super easy. Even my very carnivorous men (Hub and sons, just to be clear about why I have plural men, LOL) have expressed delight upon tasting these babies!

30 minutes work; a few hours low oven time

makes 2-4 cookie sheets of crackers

- Whole flax seed
- Water
- Any combo of your favorite seasonings, such as:
- lemon/lime
- Bragg's Aminos
- Cider vinegar
- Ume vinegar
- Garlic
- Ginger
- Cayenne
- Curry
- Turmeric
- Wasabi
- Gomasio
- Dill
- Fennel seed
- Basil
- Oregano

| Preparation: |
- Get a big jar and top, and soak a cup or two of flax seeds in an equal amount of water and seasonings overnight -- at room temp, not fridge.
- Seasonings: any combination of soy sauce, tamari or Bragg's liquid aminos; lemon/lime juice and/or grated rind; garlic, ginger, cayenne, dill, cilantro, cumin, whatever you like; apple cider vinegar or ume vinegar; sky's the limit...

- Next day, stir up the gooey thick resulting glop, and spread it on oiled (I used olive oil) cookie sheets about 1/8" - 1/4" thick. If you have silicon baking sheets to line the metal pans, all the better. If you have a dehydrator with nonstick sheets, that would be the best (mine is on order, b/c anything you can prepare at 110F or lower preserves many vitamins, probiotics, enzymes and other nutrients that are destroyed with higher temps).
- If you don't have a dehydrator, put the cookie sheets in the oven on the lowest setting possible, like 150 F or lower. Check often and when they have dried out enough, turn them over (ideally flip a whole sheet like a pancake, though if they stick it could take some scraping and fiddling). This will reveal the still-gooey moist bottom which needs to be on top a while to dry out. Put the flipped giant cracker sheets back in the low oven and check often, taking them out when they have reached a consistency you like. I like crunchy, some folks prefer the moister chewy stage.
- So all that may sound complex, but really it is SUPER easy. If your oven won't go any lower than say 300, then just get it up to heat then turn it off and crack the oven door to allow steam out. Keep doing that till the crackers are ready.
- Other possibilities I want to try: using whey and other probiotic liquids s part of the soaking liquid; trying honey, dried fruit, fruit juice, and sweet spices to make cookies instead of crackers.

Hi, Jan--
First batch, I used lemon juice and grated rind (a whole big lemon worth), grated ginger, and a splash of each: Bragg's Liquid Aminos, raw cider vinegar, umeboshi vinegar; and a drop or two of cayenne. Big hit. Second batch, I used the same and added turmeric, garlic, dill, and some pulp left from juicing as well as a bit of garbanzo flour and a few soaked raw sunflower seeds. Equally popular. Third batch, included some green powder made from wheatgrass and seaweed, could not even taste it but I know it added great nutrition. Have not heard response yet on that batch. I want to try using toasted sesame seeds in a batch soon. Not raw, butI just love that flavor. These are one of my main food groups this week, LOL.
I will indeed post the cookie info when I get around to trying that--and will you post any fun variations you come up with? Thanks.

I'm not having good luck on making sweet cookie versions of these flax crackers. Welcome any recipes based on this idea that turn out tasty yummy sweet!
