Crawfish Fettucine

- 1 1/2 c. butter
- 3 med. onions-chopped
- 2 med. bell peppers-chopped
- 1/4 c. flour
- 4 T. parsley-chopped
- 2 lbs. crawfish tails
- 1 pt. half & half
- 1 lb. Velveeta
- 2 T. jalapeno relish
- 2 cloves garlic-minced
- Salt, red pepper and black pepper to taste
- 1 lb. fine fettucine noodles
- Parmesan cheese for sprinkling

| Instructions: |
- Saute onion and bell peppers in butter, covered for 15 minutes.
- Add flour; cook covered for 15 minutes, stirring frequently to prevent sticking.
- Add parsley and tails. Cook covered 15 minutes, stirring frequently.
- Add half & half, Velveeta, relish, garlic and seasonings. Cook, covered, on low 30 minutes.
- Meanwhile, cook pasta, drain.
- Mix crawfish mixture and noodles.
- Pour into two 3 quart greased casseroles.
- Spinkle with parmesan.
- Bake at 350 degrees for 20 minutes or until heated through.

It truly is scrumptious. Not low fat unfortunately, but hey, walk on the wild side.

i can't find any of my cookbooks i have no idea what box they're in.  so, i'll be making the shrimp version, one night this week. i'm sure my friend and heaggie will be soo excited i'm actually gonna cook something other than breakfast.

mercy that sounds good! sounds like what I think the filling of crawfish pie at Stinky's might be made off (sub out noodles and add a crust).
