Description: I made up this recipe after trying to duplicate a spinach salad I'd had a local restaurant. I think I like mine better.

- 1/2 c. olive oil
- 1-2 tbsp. brown sugar
- 1/2 c. balsamic vinegar
- 1-2 cloves garlic-minced
- fresh ground pepper to taste
- Garlic salt to taste
- 5-6 slices bacon-fried crisp and crumbled
- 4 oz. package walnuts, toasted
- 4 oz. pkg. fresh mushrooms, sliced
- 6 ox. crumbled blue cheese
- Large package baby spinach leaves
- Parmesan cheese
- Croutons-I make my own from day old french bread

- Toast walnuts-set aside
- Fry bacon-set aside

| Instructions: |
- Mix the dressing: olive oil, sugar, vinegar, garlic, pepper and garlic salt. Add the mushrooms. Adding them at this point sort of "cooks" them in the dressing. You may also just add them raw into the salad. Sometimes, I also add a little of the bacon grease to the dressing. I know this is so bad, but it does add lots of flavor. Chill.
- Make the salad. Mix spinach, walnuts and blue cheese in large bowl. Add bacon and parmesan cheese.
- Toss all ingredients and add the dressing.
- Serve immediately.
