I like to make jack-0-lanterns with my pumpkins. The big pumpkins aren't too good for eating, in my experience, though the smaller ones make for some damn-good Pumpkin Cheese Cake Pie.

I decided to make Pumpkin Bread this week. If you are looking for canned pumpkin this year, it will be challenging. Publix informed me they will not have any available this year due to low crop supply

I was able to snag a few cans at Winn Dixie.

Funny, I have heard this twice already this year- widespread flooding killed the pumpkin crop. I seriously almost had a full blown panic attack at the news.

My daughter baked pumpkin bread yesterday. Now there's a shortage of sugar and butter in GA. It was a Paula Deen recipe. It looked good, though.

I'm sure it'll be all gone when I get home tomorrow.

You can make tasty muffins with a can of pumpkin (not pumpkin pie filling, just canned pumpkin) and a box cake mix (I recommend chocolate or spice), you combine and spoon into muffin pans. These are really moist and much lower calorie and pumpkin is pretty good for you, too. You should store in fridge/freezer as they're so moist they get furry quickly!

Made this last night for dinner. Easy Pumpkin soup...

1 can of pumpkin
1 can of navy beans (drained and rinsed)
3-1/2 cups of chicken broth
1 medium onion roughly chopped
2 tsp oregano
2 tsp cumin
1/2 tsp salt (or to taste)
1/2 tsp pepper (or to taste)

Sweat the onion in a soup pot in about 2 tablespoons of olive oil until they are tender (about 6 minutes)
Add the chicken broth, beans, salt, pepper, cumin, and oregano.

Simmer for about 8 minutes.

Puree the soup in a blender in batches and transfer to a crock pot if you want to eat off of it over the course of a day or puree it in the soup pot using an imersion blender or boat motor.

Serve with either some grated cheese or a blob of sour cream.

Mmm mmm mmm!
