Shrimp and Eggplant Casserole

2 eggplants
1 med. chopped onion
1 med. bell pepper, chopped
1 cup celery, finely chopped
red pepper, paprika, garlic, salt
2 lbs. shrimp, peeled and deveined
1/4 cup oil
2 cups slightly undercooked rice (measure after cooked)
1 can (?) buttered, toasted crumbs (I make my own)
1/2 lb. sharp cheddar cheese, grated
1 can cream of mushroom soup


~ Fry shrimp in oil until pink.
~ Remove shrimp from skillet and fry onions, celery, and bell pepper until crisp. Add to shrimp.
~ Peel eggplant, cut into cubes, cover with slightly salted water and simmer until tender but not too soft. Drain well, add salt and pepper.
~ Mix rice, eggplant and shrimp mixture. It should be highly seasoned (red pepper). Stir lightly.
~ Spoon into 2 1/2 quart buttered casserole. Top with undiluted mushroom soup and grated cheese. Add the buttered, toasted bread crumbs.
~ Sprinkle with paprika and bake for 45 minutes in a 350-degree oven. Serves 8.

Sounds delish. How could you go wrong with shrimp, eggplant and cheese?

I've never tried eggplant but my wife loves it. We're young and we've only been married a year and a half so we are still learning how to 'cook' and make meals. I may have to try this with her. Thanks.

Back when Ms Seaside used to cook, she made one similar to that except she took the eggplant out of the shell, made the stuffing as above and placed it back in the shell (like a twice baked potatoe) and baked it. Pretty darn good.

Wish I had me some for dinner tonight with some Cakebread wine. Probably end up with PB&J (not that there is anything wrong worth PB&J).

I love eggplant! Here's another recipe...healthy and low cal.

4 Chicken Breasts
1 Lg. Eggplat
4-6 Portabella Mushroom Caps (Lg ones)
1 1/2 cups olive oil
Lots of FRESH garlic
Lots of FRESH rosemary
Natures Seasoning
Salt and Pepper to taste
In a large zip lock bag, marinate chicken in 1/2 of olive oil. garlic, rosemary and seasoning.
In another lg zip lock, marinate eggplant slices (1/2 to 3/4 inch rounds) and mushrooms in the rest of the marinade (Prepare the same as you did the chicken).
Refrigerate for at least 1/2 hour.
Grill chicken til done then eggplant and mushrooms.......

I have a grill on my stove top at home and love to fix this when the girlfriends are over and having cocktails. We nibble right off the grill. DELICIOUS!!!!

you can't, actually. this comes from my politically-incorrect cookbook,
white trash cooking by ernest mickler. it is a fun read, and has some great recipes. an awesome peach pie recipe, for instance, with mace and almond extract in hte peaches instead of the usual cinnamon. we like the combination so well that i always use mace and almond in fresh peaches. yummy.

no no - it is wonderful! you just have to play a little michael franks eggplant song while you cook it up, and you will love it!!

would love to have this recipe (not the PBJ!) if you can find it, and have time. right now i'm making a huge pot of turtle soup (mock) - yummy!
